Why do my images appear out of order?

Because the file names are not zero-padded. Without padding, page 10 sorts directly after page 1. Rename the set with leading zeros, or sort the folder by the date the files were created.

Is there a limit to how many images I can export?

In practice the limit is free disk space. A 200-page scan at 300 dpi takes a surprising amount of room, so check the destination drive if a conversion seems to stall near the end.

Can I export only the odd-numbered pages?

Not with a simple range box, which takes consecutive pages. Export the whole document and delete the images you do not want, or separate them afterwards using batch renaming.
